Depression Era Wine Recipes
My childhood neighbor was a winemaker and his widow gave me his recipe book when I was about 10 years old.   My parents hid it from me for obvious reasons.  I recently came across it while moving my parents from their house.   I scanned the little book  and you can read it by clicking the title.   These were "all natural" wines - some barely done fermenting before they were bottled and consumed.

A spread sheet for calculating ABV.

Begin by putting your  starting  and finished SG (specific gravity) without decimal points in the highlighted cells.  Example - initial SG is 1.090 and your finished SG is .990 - you would input 1090 and 990 in the designated cells.
 
Then input the volume in OUNCES. 
Example - You have 5.5 gallons after racking and measuring SG.
5.5 X 128 (ounces in 1 gal) = 704 ounces

Then input the volume of your liquid sweetener - syrup, juice, etc. in ounces.
Example - 6 cans of 12 oz juice concentrate = 72 ounces.

The result is new ABV % after backsweetening.

Backsweetening with Simple Syrup

Simple Syrup – 2 cups sugar : 1 cup water – boil until clear, then pour into canning jars, seal.

Bench Trials – initial testing

1/8 t : 1 oz wine = 1t : 8 oz. = 1/3 cup : gallon

1/8t : 1.5 oz wine = 5/8 t : 8 oz or ¾ t to I cup =

3t : 4 cups = 1T : qt = 4T : gal = 1/6 c + 1T : gal

1/8t : 2 oz wine = 1/2t : 8 oz = 1/6 cup : gallon (3T : gal)

Bulk sweetening after trials

¼ t : 1 oz wine = 2t : 8 oz = 2/3 cup per gallon

¼ t : 1.5 oz wine = 1t : 6 oz = 3/8 cup + 1T per gallon
          OR – 7.12 T : gal

¼ t : 2 oz wine = same as 1/8t : 1 oz - 1/3 cup per gallon
